Chocolate Chip Pudding Cookies

Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1 cup butter
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 package (3 2/5 oz) instant vanilla pudding mix
  • 1 tsp vanilla extract
  • 2 large eggs
  • 12 oz semisweet chocolate chip morsels
  • 1 cup pecans or walnuts (optional)

Steps

  1. Heat the oven to 350 F and line a large baking sheet.
  2. Whisk the flour and baking soda together in a bowl.
  3. Beat the butter, brown sugar, granulated sugar, pudding mix, and vanilla until smooth, then beat in the eggs.
  4. Gradually mix in the flour mixture, then stir in the chocolate chips and nuts if using.
  5. Drop 24 spoonfuls onto the baking sheet and bake for 10 minutes, then cool for 5 minutes.
