- 3 over-ripe bananas
- 2 large eggs
- 1/3 cup pure maple syrup
- 1/4 cup avocado oil or melted coconut oil
- 1 tsp vanilla extract
- 1 1/4 cups packed super fine blanched almond flour
- 3/4 cup oat flour
- 1/2 cup cocoa powder
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp fine sea salt
- 1/2 cup chocolate chips
Steps
- Heat the oven to 350 F and grease a 9-by-5-inch loaf pan with cooking oil.
- Mash the bananas in a large bowl, then whisk in the eggs, maple syrup, oil, and vanilla.
- Stir in the almond flour, oat flour, cocoa powder, baking soda, baking powder, and salt until combined.
- Fold in the chocolate chips and spread the batter evenly in the pan.
- Bake for 50 to 55 minutes, until the center is set, then cool the loaf for 10 minutes before slicing.
