  • 1/2 tsp salt
  • 12 large egg whites
  • 3 tbsp water
  • 1 1/2 tsp cream of tartar
  • 1 1/2 tsp vanilla extract
  • 2 oz dark chocolate
  • 2 cups heavy cream
  • 3/4 cup powdered sugar
  • 1/4 cup dutch process cocoa powder
  • 1 tsp vanilla extract
  • raspberries (optional)

Steps

  1. Heat the oven to 325 F and place a rack in the lower middle position.
  2. Whisk the flour, cocoa powder, salt, and half the granulated sugar in a bowl.
  3. Beat the egg whites, water, cream of tartar, and vanilla in a large bowl until foamy, then slowly beat in the remaining sugar until stiff peaks form.
  4. Fold the dry mixture into the egg whites in three additions, spread the batter in an ungreased 10-inch tube pan, and bake for 45 to 50 minutes.
  5. Invert the pan onto its legs or a bottle and cool the cake completely for 60 minutes before removing it.
  6. Melt the dark chocolate, cool it slightly, then whip the heavy cream, powdered sugar, cocoa powder, and vanilla before spreading the cream over the cake and drizzling on the chocolate.
