Ingredients
- 1/2 cup uncooked quinoa
- 1 cans (14 oz) black beans
- 1 1/2 individual chipotle peppers
- 1/2 tsp each: garlic powder
- 1 egg
- 1 tsp salt
- 1/4 cup panko breadcrumbs
Steps
- Rinse the quinoa, simmer it with 1 cup water in a small saucepan for 12 minutes, and cool it for 3 minutes.
- Drain the black beans, then mash them with the quinoa, chipotle peppers, garlic powder, salt, egg, and breadcrumbs.
- Shape the mixture into four patties.
- Heat cooking oil in a large skillet over medium heat and cook the patties for 4 minutes per side.
