Ingredients
- olive oil for frying (optional)
- 65 g unsmoked pancetta
- 175 g spaghetti
- 2 eggs
- 50 g pecorino or parmesan
- 2 tbsp pesto
- 1 handful rocket or other leaves
- 3 tbsp extra virgin olive oil plus a drizzle
- 180 g vine cherry tomatoes
- 2 tbsp balsamic vinegar
Steps
- Cook the pancetta in a large skillet over medium heat for 5 minutes, until browned.
- Cook the spaghetti in salted boiling water for 8 minutes, then drain it while reserving a little cooking water.
- Whisk the eggs, pecorino or Parmesan, and pesto in a bowl.
- Add the hot spaghetti to the pancetta skillet, turn off the heat, and toss in the egg mixture until the eggs are firm and coat the pasta.
- Cook the tomatoes with balsamic vinegar and a drizzle of oil in a second skillet over medium-high heat for 5 minutes, until they burst.
- Toss the rocket and remaining olive oil with the pasta, then top it with the balsamic tomatoes.
