Ingredients
- 1 can (15 oz) chickpeas or garbanzo beans
- 1/2 cup finely chopped onion
- 1/2 cup finely chopped celery
- 1/2 cup vegan mayonnaise
- 3 tbsp honey mustard or dijon mustard
- 2 tbsp snipped fresh dill
- 1 tbsp red wine vinegar
- 1/4 tsp salt
- 1/4 tsp paprika
- 1/4 tsp pepper
- 12 slices multigrain bread
- optional toppings: romaine leaves
Steps
- Drain and rinse the chickpeas, then mash them in a medium bowl.
- Stir in the onion, celery, vegan mayonnaise, mustard, dill, vinegar, salt, paprika, and pepper.
- Spread the chickpea salad over six bread slices.
- Add romaine leaves if using and top with the remaining bread slices.
