Ingredients

1 cup long-grain brown rice
2 1/2 cups vegetable broth
8 oz can chickpeas
6 1/2 oz package of frozen broccoli
1/2 onion
2 cloves garlic
3/4 tsp salt
3 1/7 oz container plain greek yogurt
1/2 cup shredded cheddar cheese (optional)

Steps

Rinse the brown rice and drain the chickpeas.
Add rice, broth, chickpeas, frozen broccoli, chopped onion, garlic, and salt to a slow cooker.
Cover and cook on high for 2 hours, until the rice is tender and the liquid is absorbed.
Stir in the Greek yogurt until the casserole is creamy.
Sprinkle with cheddar, cover, and cook for 5 minutes until the cheese melts.
