Ingredients
- 1/2 cup sun-dried tomatoes
- 1 tbsp extra virgin olive oil
- 4 cups packed baby spinach
- 15 oz canned cannellini beans
- 1/2 a large yellow onion
- 2 cloves garlic
- 3/4 cup unsweetened almond milk
- salt and pepper
Steps
- Drain the beans and chop the onion, garlic, and sun-dried tomatoes.
- Heat the olive oil in a large skillet over medium heat and cook the onion for 4 minutes.
- Add the garlic and sun-dried tomatoes and cook for 1 minute.
- Stir in the beans and almond milk, then simmer for 6 minutes until creamy.
- Fold in the spinach and cook for 2 to 3 minutes until wilted, then season with salt and pepper.
