Ingredients

1 lb dried cannellini beans
2 tbsp extra-virgin olive oil
1 onion
2 bay leaves
4 sprigs fresh thyme
3 cloves garlic
2 tsp sea salt
1 tsp freshly cracked black pepper

Steps

Rinse the beans and soak them in plenty of water for 8 hours, then drain them.
Put the beans, onion, garlic, bay leaves, thyme, salt, pepper, oil, and 6 cups water in a large pot.
Bring the pot to a boil over high heat, then skim off any foam.
Cover and simmer gently for 45 minutes, adding water if needed to keep the beans covered.
Continue simmering for 7 hours, or until the beans are tender and reach a soft, creamy texture.
Remove the bay leaves and thyme stems before serving.
