Ingredients
- 1 tbsp extra virgin olive oil
- 4 zucchini
- 1/3 cup grated parmesan cheese
- 8 oz shredded mozzarella cheese
- 1/4 cup fresh parsley
- kosher salt (optional)
- 1/2 cup seasoned bread crumbs
- 2 tbsp butter
Steps
- Heat the oven to 375 F and oil a 9-by-13-inch baking dish.
- Slice the zucchini and arrange half in the dish.
- Sprinkle on half the Parmesan, mozzarella, parsley, breadcrumbs, salt, and pepper.
- Add the remaining zucchini and repeat the cheese, parsley, breadcrumbs, salt, and pepper layers.
- Melt the butter in a small pan over medium heat and drizzle it over the casserole.
- Cover with foil and bake for 40 minutes, then uncover and bake for 15 minutes until tender and golden.
