Ingredients
- 1 head cauliflower
- salt and olive oil
- 1 package taco seasoning
- 1 cans (14 oz) refried black beans
- 9 small corn tortillas
- 1/4 cup vegetable or canola oil
- cilantro
- pickled red onion
- queso
Steps
- Heat the oven to 425 F and oil a large baking sheet.
- Cut the cauliflower into small florets, toss it with olive oil, taco seasoning, and salt, and roast for 22 minutes.
- Heat the refried black beans with 2 tablespoons water in a small saucepan over medium-low heat for 8 minutes.
- Heat the vegetable oil in a large skillet over medium heat and fry the tortillas for 1 to 2 minutes per side, until crisp.
- Spread beans over the crisp tortillas and top with roasted cauliflower, queso, cilantro, and pickled red onion.
