Ingredients
- 1 box (16 oz) mochiko flour
- 2 cups granulated sugar
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 4 large eggs
- 2 cups whole milk
- 1 can (13 1/2 oz) coconut milk
- 1/2 cup unsalted butter
- 2 tsp vanilla extract
Steps
- Heat the oven to 350°F and grease a 9-by-13-inch baking pan with butter.
- Whisk the mochiko flour, sugar, baking powder, and salt in a large bowl.
- Whisk the eggs, whole milk, coconut milk, melted butter, and vanilla in a separate bowl.
- Stir the wet mixture into the dry mixture until smooth, then pour it into the pan.
- Bake for 55 to 60 minutes, until the center is firm and the top is golden.
- Cool the mochi in the pan for 10 minutes before cutting it into squares.
