Ingredients
- 1 tsp olive oil
- 1 large onion
- 1 cup brown rice
- 2 cups water or 2 cups broth
- 1 box (10 oz) frozen spinach
- 4 oz feta cheese
- 8 kalamata olives
- 4 eggs
Steps
- Heat olive oil in a large saucepan over medium heat, then cook the chopped onion for 8 minutes.
- Stir in the brown rice and water, bring to a boil, cover, and simmer for 45 minutes.
- Stir in the frozen spinach, cover, and cook for 5 minutes.
- Make four wells in the rice, crack in the eggs, cover, and cook for 8 minutes until firm.
- Turn off the heat, cover the saucepan, and let the rice rest for 9 minutes.
- Top with feta cheese and sliced kalamata olives before serving.
