- 6 tbsp unsalted butter
- 2 cups unbleached all-purpose flour
- 3/4 cup sugar
- 3/4 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp ground ginger
- 1/2 tsp ground cinnamon
- 2 large eggs
- 1 1/2 cups mashed bananas
- 1/4 cup whole-milk plain yogurt
- 1 tsp vanilla extract
Steps
- Heat the oven to 350 F and grease a 9-by-5-inch loaf pan.
- Melt butter in a saucepan over medium heat for four to six minutes, until browned and nutty.
- Whisk flour, sugar, baking soda, salt, ginger, and cinnamon in a large bowl.
- Whisk eggs, bananas, yogurt, vanilla, and browned butter in another bowl.
- Stir the wet mixture into the dry mixture until just combined.
- Pour the batter into the pan and bake for 55 to 65 minutes, until a tester comes out clean.
- Cool the loaf in the pan for 15 minutes before slicing.
