- 1/2 cup unsalted butter
- 2/3 cup granulated sugar
- 2 large eggs
- 1/2 cup plain greek yogurt
- 1/2 cup milk
- 1 tbsp white vinegar
- 1/2 tsp baking soda
- 1/4 tsp baking powder
- 1 cup fine yellow cornmeal
- 1 cup all-purpose flour
- 1/2 tsp salt
Steps
- Heat the oven to 375 F and grease a 24-cup mini muffin pan with cooking oil.
- Stir the milk and vinegar together, then let them stand for 5 minutes.
- Melt the butter and beat it with the sugar, eggs, and yogurt.
- Stir in the milk mixture, then mix in the cornmeal, flour, baking soda, baking powder, and salt.
- Divide the batter among the muffin cups and bake for 12 to 15 minutes, until the centers are firm.
- Cool the muffins in the pan for 5 minutes before removing them.
