Ingredients
- 1 lb cod filet
- 3 tbsp sugar
- 1/4 cup water
- 1/4 cup yellow miso paste
- 2 tbsp mirin or sake or combination of both
- 2 tbsp vegetable oil
- 1/2 tsp sesame oil
- 1 lb slender asparagus spears
- 1/2 lb shiitake mushrooms
- kosher salt and freshly ground black pepper
Steps
- Whisk sugar, water, miso, mirin, vegetable oil, sesame oil, salt, and pepper in a bowl.
- Coat the cod with half the mixture and refrigerate it for 20 minutes.
- Heat the broiler to 500 F and arrange asparagus and mushrooms on a broiler pan.
- Toss the vegetables with the remaining miso mixture and broil for 5 minutes.
- Add the cod to the pan and broil for 8 to 10 minutes until it flakes easily and reaches 145 F.
- Season the vegetables with salt and pepper before serving.
