Ingredients
- 2 lb chicken breast
- salt and pepper
- 1/2 cup unbleached all purpose flour
- 2 eggs
- 1 cup plain breadcrumbs
- canola or vegetable oil
- fresh parsley and lemon wedges
Steps
- Cut the chicken breasts into even pieces and season them with salt and pepper.
- Place flour in one shallow bowl, beaten eggs in another, and breadcrumbs in a third.
- Coat each chicken piece in flour, dip it in egg, and cover it with breadcrumbs.
- Heat 1/4 inch oil in a large skillet over medium heat.
- Fry the chicken for 4 to 5 minutes per side until golden and 165 F inside.
- Garnish with parsley and lemon wedges.
