Ingredients
- 1 1/2 lb 3 large chicken breasts
- 2 large eggs
- 5 tbsp about 1/3 cup mayonnaise
- 1/3 cup all-purpose flour
- 4 oz 1 1/3 cups shredded mozzarella cheese
- 1 1/2 tbsp chopped fresh dill
- 1/2 tsp salt and 1/8 tsp black pepper (optional)
- extra light olive oil
Steps
- Chop the chicken into small pieces and stir it with eggs, mayonnaise, flour, mozzarella, dill, salt, and pepper.
- Cover the bowl and refrigerate the mixture for 2 hours.
- Heat a thin layer of oil in a large skillet over medium heat.
- Spoon the chilled mixture into small rounds and cook for 4 to 5 minutes per side.
- Check that the centers reach 165 F, then cook any thick fritters longer as needed.
- Drain the fritters briefly on a plate and serve them hot.
