Ingredients
- 2 cups sourdough starter
- 1/4 cup whole-wheat flour
- 2 tbsp granulated sugar (optional)
- 2 eggs
- 5 tbsp oil
- 1/2 tsp salt
- 1 1/2 tbsp warm water
- 1 cup blueberries
- 1 1/2 tsp baking soda
Steps
- Whisk the sourdough starter, flour, sugar, eggs, 3 tablespoons oil, salt, and warm water in a bowl.
- Stir in the baking soda and let the batter rest for 5 minutes.
- Heat a large skillet or griddle over medium heat and brush it with some remaining oil.
- Pour about 1/4 cup batter for each pancake and add blueberries to the wet tops.
- Cook for 2 to 3 minutes, until bubbles form and the bottoms are browned.
- Flip the pancakes and cook for 2 minutes, until firm and cooked through.
