Ingredients
- 1/3 cup blueberries
- 2 tbsp raw granulated turbinado sugar or other equivalent sweetener
- 1 tsp vegan butter
- 6 1/2 raw cashews broken into small pieces
- 3 tbsp raisins
- 3 tbsp semolina
- 2 tbsp oats
- 1/4 tsp cardamom powder
- 2 1/2 tbsp water or almond milk
Steps
- Melt vegan butter in a small skillet over medium-low heat.
- Toast cashews, raisins, semolina, oats, and cardamom for 4 minutes, stirring often.
- Cook blueberries, sugar, and water in a small saucepan for 3 minutes, until softened.
- Stir the blueberry mixture into the toasted grains and cool for 3 minutes.
- Shape the mixture into eight small balls with lightly oiled hands.
