- bacon fat
- 1 3/4 cups all-purpose flour
- 1 1/4 cups yellow cornmeal
- 1 1/2 tsp baking powder
- 1 tsp baking soda
- 3/4 tsp salt
- 1 cup sour cream
- 2/3 cup granulated sugar
- 1/2 cup milk
- 2 large eggs
Steps
- Heat the oven to 400 F and coat a 10-inch oven-safe skillet with bacon fat.
- Whisk the flour, cornmeal, baking powder, baking soda, and salt in a large bowl.
- Whisk the sour cream, sugar, milk, melted butter, and eggs in another bowl.
- Stir the wet mixture into the dry mixture until just combined, then fold in the blueberries.
- Spread the batter in the skillet and bake for 20 to 24 minutes, until golden and firm in the center.
- Cool the cornbread for 5 minutes before cutting.
