Ingredients
- 1 can (28 oz) italian plum tomatoes
- 1 cup vegetable broth
- 1 cup quick-cooking brown rice
- 1 tsp garlic
- 2 bay leaves
- 1 tsp dried basil
- 1 tsp dried thyme
- 1 tsp hot pepper sauce (optional)
- 1 large green bell pepper
- 1 can (16 oz) black-eyed peas

Steps
- Drain the black-eyed peas and dice the green bell pepper for 5 minutes.
- Heat cooking oil in a large skillet over medium heat and cook the bell pepper for 8 minutes.
- Stir in the garlic, basil, thyme, and bay leaves for 2 minutes.
- Add the tomatoes, broth, rice, peas, and hot pepper sauce, then simmer covered for 25 minutes until the rice is tender.
