Ingredients

2 tbsp olive oil
1 onion
5 cloves garlic
1 1/2 tsp ground cumin
2 cup uncooked white rice
4 cups chicken broth
2 x 14 ounce cans black beans
3 1/2 tbsp lime juice
4 tbsp cilantro (optional)

Steps

Heat the oil in a large pot over medium heat and cook the onion for 4 minutes.
Add the garlic and cumin, then cook for 1 minute.
Stir in the rice and cook for 2 minutes.
Add the broth and black beans, then bring the mixture to a boil.
Cover the pot, reduce the heat to low, and simmer for 18 minutes.
Remove the pot from the heat, rest it covered for 5 minutes, and stir in the lime juice and cilantro.
