- 1 tbsp olive oil
- 1 small onion
- 2 cloves garlic
- 3/4 tsp ground cumin
- 1/4 tsp chili powder
- 1/4 tsp smoked paprika
- 1/2 tsp dried oregano
- 1 can (15 1/2 oz) pinto beans
- 1/3 cup vegetable broth
- salt and black pepper (optional)
- 1 dash hot sauce
- fresh chopped cilantro (optional)
Steps
- Heat the olive oil in a medium skillet over medium heat and cook the onion for 5 minutes.
- Add the garlic, cumin, chili powder, smoked paprika, and oregano, then cook for 1 minute.
- Stir in the beans and vegetable broth, then simmer for 12 minutes.
- Season with salt and pepper, stir in the hot sauce, and top with cilantro.
