Ingredients
- 1 14 oz canned low-sodium black beans
- 2 large eggs
- 1/2 cup cocoa powder
- 3/4 cup sugar
- 1/2 tsp oil
- 1 tbsp unsweetened almond milk
- 1 tsp balsamic vinegar
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp freshly ground coffee or instant coffee
- 1 cup semisweet chocolate chips
Steps
- Heat the oven to 350 F and lightly oil an 8-inch square baking pan.
- Drain the beans, rinse them with water, and blend them with the eggs, cocoa powder, sugar, oil, almond milk, vinegar, baking powder, baking soda, and coffee.
- Stir in the chocolate chips until evenly mixed.
- Spread the batter in the prepared pan and bake for 25 to 30 minutes, until the center is set and the eggs reach 160 F.
- Cool the brownies in the pan for 10 minutes before cutting.
