Ingredients
- 1 lb strawberries
- 1 pint blueberries
- 1/4 cup granulated sugar
- 1 lemon
- 2 oz heavy cream
- 2 tbsp honey
- 1 tsp vanilla
- 1/4 cup fresh mint (optional)
- 1/3 cup all purpose flour
- 7 graham crackers
- 1/4 cup granulated sugar
- 1/2 tsp kosher salt
- 1/8 tsp cinnamon
- 6 tbsp unsalted butter
Steps
- Hull and slice the strawberries, then toss them with sugar, lemon juice, and brandy.
- Let the strawberries stand for 10 minutes while gently rinsing the blueberries.
- Whip the heavy cream with honey and vanilla, then fold it into the Greek yogurt.
- Layer the berries and yogurt mixture in 6 glasses, finishing with a few berries on top.
- Chill the parfaits for 10 minutes before serving.
