Ingredients
- 1 lb ground beef
- 1 lb bulk pork sausage
- 4 cans (16 oz) kidney beans
- 2 cans diced tomatoes
- 2 cans (10 oz) diced tomatoes and green chiles
- 1 large onion
- 1 green pepper
- 1 envelope taco seasoning
- 1/2 tsp salt
- 1/4 tsp pepper
- optional: shredded cheddar cheese
Steps
- Brown the ground beef and sausage in a large pot over medium heat until no pink remains and the meat reaches 160 F.
- Add the chopped onion and green pepper, then cook for 5 minutes until softened.
- Stir in the beans, diced tomatoes, tomatoes with green chiles, taco seasoning, salt, and pepper.
- Bring the chili to a gentle boil, then reduce the heat to low.
- Cover the pot and simmer for 4 hours, stirring occasionally.
