Ingredients
- 2 chicken breasts
- 1/4 cup balsamic vinegar
- 2 tbsp olive oil
- 1 tbsp brown sugar
- 1 tsp soy sauce
- 1 tsp fresh rosemary (optional)
- kosher salt and freshly ground black pepper
- 3 peaches
- 8 slices provolone cheese
Steps
- Whisk the balsamic vinegar, olive oil, brown sugar, soy sauce, rosemary, salt, and pepper in a bowl.
- Cut the chicken into thin pieces, coat them with the marinade, and rest for 10 minutes.
- Heat a 12-inch oven-safe skillet over medium heat and cook the chicken for 6 minutes per side.
- Add the sliced peaches around the chicken and cook for 4 minutes.
- Top the chicken and peaches with provolone, transfer the skillet to a 400 F oven, and bake for 8 minutes.
- Check that the chicken reaches 165 F, then rest the skillet for 2 minutes.
