Ingredients
- 5/8 cups water
- 1/2 cup uncooked medium pearl barley
- 1/4 tsp salt
- 2 cups milk
- 1 cup heavy whipping cream
- 1/2 cup sugar
- 2 eggs
- 1 tsp vanilla extract
- 1/2 cup golden raisins
- 1/4 tsp ground cinnamon
Steps
- Simmer the barley, water, and salt in a medium saucepan over medium heat for 20 minutes.
- Heat the oven to 350 F and lightly oil a 9-by-13-inch baking dish.
- Whisk the milk, cream, sugar, eggs, vanilla, and cinnamon in a large bowl.
- Stir the cooked barley and raisins into the milk mixture, then pour it into the baking dish.
- Bake for 40 minutes, until the pudding is set and the eggs are firm.
