Ingredients
- 9 oz ramen noodles
- 2 tsp olive oil
- 2 large eggs
- 1 cup grated parmesan cheese
- 6 slices bacon
- 1/3 cup finely diced onion
- 3 cloves garlic
- salt and black pepper to taste (optional)
- fresh basil (optional)
Steps
- Whisk the eggs and Parmesan in a medium bowl until smooth.
- Cook the ramen noodles in boiling water for 3 minutes, then drain.
- Cook the bacon in a large skillet over medium heat for 5 to 7 minutes, then transfer it to a plate.
- Cook the onion and garlic in the bacon fat with the olive oil for 2 minutes.
- Add the noodles and bacon, then remove the skillet from the heat.
- Stir in the egg mixture over low heat for 2 to 3 minutes until the eggs are firm and the sauce coats the noodles.
