Ingredients
- 10 slices bacon
- 8 1/2 cups water
- 4 cloves garlic
- 1 lb spaghetti
- 1 1/4 cups finely grated parmesan cheese (optional)
- 3 large eggs
- 1 large egg yolk
- 1 tsp each salt and pepper (optional)
- chopped fresh parsley (optional)
Steps
- Bring the water and salt to a boil in a large pot.
- Cook the bacon in a large skillet over medium heat for 8 to 10 minutes, then crumble it and cook the garlic in the drippings for 1 minute.
- Boil the spaghetti for 9 to 11 minutes, until tender, then reserve 1 cup cooking water and drain the pasta.
- Whisk the eggs, egg yolk, Parmesan, pepper, and 2 tablespoons cooking water in a bowl.
- Add the hot spaghetti and bacon to the skillet and toss over low heat.
- Stir in the egg mixture for 2 to 3 minutes, adding cooking water as needed, until the sauce thickens and reaches 160 F.
