Ingredients
- 8 slices bacon
- 1 cup asparagus cut into 1/2 inch pieces
- 2 cloves garlic
- 10 large eggs
- 1 cup shredded cheddar cheese
- 1/4 cup heavy whipping cream
- 1/4 cup parsley
- 2 tbsp chopped green onions
- 1/2 tsp salt
- pepper to taste (optional)
Steps
- Heat the oven to 400 F and cook the bacon in a 10-inch oven-safe skillet over medium heat until crisp.
- Drain the bacon, crumble it, and leave 1 tablespoon of fat in the skillet.
- Cook the asparagus and garlic in the skillet over medium heat for 3 minutes.
- Whisk the eggs, cream, salt, pepper, parsley, and green onions in a bowl.
- Pour the egg mixture into the skillet and top it with bacon and cheddar.
- Bake for 8 to 10 minutes until the eggs are firm and reach 160 F.
