Ingredients
- 1 can corn
- 1 can kidney beans
- 1 can black beans
- 1/2 onion
- 4 cloves garlic
- 6 dried pequin chiles
- mustard seed (optional)
Steps
- Drain the corn and beans, then rinse them under cool water.
- Toast the dried chiles and optional mustard seed in a large dry skillet over medium heat for 2 minutes.
- Add oil, chopped onion, and garlic, then cook for 5 minutes.
- Stir in the corn, beans, chiles, salt, pepper, and 1 cup water.
- Cover and simmer over medium-low heat for 25 minutes, stirring occasionally.
