Ingredients
- 1 lb baby asparagus
- 8 large eggs
- 3/4 cup whole milk ricotta
- 1/4 cup parmesan (optional)
- 2 tbsp chives (optional)
- 1 tbsp fresh dill (optional)
- 1 tsp dijon mustard
- as needed kosher salt & pepper (optional)

Steps
- Heat the oven to 375 F and oil a 10-inch oven-safe skillet.
- Trim the asparagus, cut it into short pieces, and cook it in the skillet over medium heat for 5 minutes.
- Whisk the eggs, ricotta, milk, mustard, salt, pepper, chives, dill, and parmesan in a bowl.
- Pour the egg mixture over the asparagus and cook on the stovetop for 5 minutes.
- Bake the skillet for 20 minutes until the center is firm and the eggs are fully cooked.
- Rest the frittata for 5 minutes before cutting.
