Ingredients
- 1 cup creamy natural salted peanut butter
- 1 cup unsweetened applesauce
- 3 large eggs
- 1/4 cup pure maple syrup or honey
- 1 apple
- 1 tbsp cinnamon
- 3/4 tsp baking soda
- 1/4 tsp fine sea salt
Steps
- Heat the oven to 350 F and line a 12-cup muffin pan.
- Peel and finely chop the apple.
- Whisk the peanut butter, applesauce, eggs, maple syrup or honey, cinnamon, baking soda, and salt in a bowl.
- Fold in the chopped apple and divide the batter among the muffin cups.
- Bake for 19 minutes, until the centers are firm and reach 160 F.
- Cool the muffins in the pan for 5 minutes before removing them.
