Ingredients

  • 2 1/2 lb boneless beef chuck roast
  • salt and pepper to taste (optional)
  • 2 cups barbecue sauce
  • 1 package ready-to-serve fully cooked bacon
  • 1 small onion
  • 4 cloves garlic
  • 1/4 cup packed brown sugar
  • 2 tbsp worcestershire sauce
  • 2 tbsp juice from banana peppers
  • 1 package slider rolls
  • 8 oz shredded provolone cheese
  • 6 oz sliced provolone cheese
  • 2 tbsp butter
  • 1 tbsp italian seasoning
  • 1 tsp garlic powder

Steps

  1. Heat a covered grill for indirect cooking at 300 F, and season the chuck roast with salt and pepper.
  2. Place the roast in a grill-safe pan with the barbecue sauce, onion, garlic, brown sugar, Worcestershire sauce, and banana pepper juice.
  3. Cover the pan and grill for 5 hours, until the beef reaches 160 F and pulls apart easily.
  4. Rest the roast for 15 minutes, then shred it and stir it into the sauce.
  5. Split the slider rolls, fill them with beef, bacon, and shredded provolone, and arrange them in a 9-by-13-inch pan.
  6. Top with sliced provolone, brush the rolls with melted butter mixed with Italian seasoning and garlic powder, and grill at 350 F for 10 minutes.
