Ingredients
- 2 eggs
- 1 cup coconut sugar or packed brown sugar
- 1/2 cup tahini
- 1/4 cup melted and cooled coconut oil
- 2 tsp vanilla extract
- 1 cup packed fine blanched almond flour
- 1/2 cup crushed graham crackers
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup chocolate chips or chocolate chunks
- 1 1/2 cups mini marshmallows
Steps
- Heat the oven to 350 F and line an 8-inch square baking pan with parchment.
- Whisk the eggs, coconut sugar, tahini, melted coconut oil, and vanilla in a large bowl.
- Stir in the almond flour, crushed graham crackers, baking soda, and salt until combined, then fold in the chocolate chips.
- Press the batter into the pan and bake for 18 minutes.
- Scatter the mini marshmallows over the top and bake for 2 to 3 minutes, until lightly browned.
- Cool the bars in the pan for 10 minutes before cutting.
