Ingredients
- 1 large potato
- 1/2 cup white onion
- 2 cloves garlic
- 2 tbsp olive oil
- 2 size tomatoes
- 8 cups chicken broth
- 8 oz “queso fresco” cheese diced. optional
- salt and pepper
- bread or tortillas for serving (optional)
Steps
- Heat the olive oil in a 6-quart pot over medium heat, then cook the onion and garlic for 5 minutes.
- Add the potato and tomatoes, and cook for 5 minutes.
- Pour in the chicken broth and bring the soup to a boil.
- Reduce the heat and simmer uncovered for 25 minutes, until the potato is tender.
- Season with salt and pepper, then stir in the queso fresco if using and cook for 5 minutes.
