Ingredients
- 1 tbsp sunflower oil
- 1 small onion chopped
- 8 spring onions sliced
- 400 g new potatoes peeled and halved
- 1 l vegetable stock
- 500 g sweetcorn kernels
- 200 ml milk
- small bunch of chives chopped
Steps
- Heat the sunflower oil in a large pot over medium heat.
- Cook the onion and spring onions for 5 minutes until softened.
- Add the potatoes and vegetable stock, then simmer for 15 minutes until the potatoes are tender.
- Stir in the corn and milk, and simmer gently for 8 minutes without boiling.
- Mash some potatoes against the pot to thicken the chowder, then stir in the chives.
