1/2 tbsp olive oil
1/2 tsp garlic powder
1/2 tsp cumin
1/2 tsp smoked paprika
1/4 tsp chile powder
salt and pepper (optional)
4 cups kale leaves
2 tsp olive oil
salt (optional)
1 cup reduced-fat cheddar cheese

Steps

Heat the oven to 400 F and line a large baking sheet with oil.
Slice the sweet potato into thin rounds and toss them with olive oil, garlic powder, cumin, smoked paprika, chile powder, salt, and pepper.
Arrange the slices in one layer on the baking sheet.
Bake for 30 minutes, turning the slices halfway through.
Toss the kale with its olive oil and salt, then scatter it over the sweet potatoes.
