- 1 1/4 cups all-purpose flour
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 1/4 tsp ginger
- 1/8 tsp nutmeg
- 1/4 cup butter
- 2/3 cup packed light-brown sugar
- 1 egg
- 1 tsp vanilla extract
- 1/2 cup buttermilk
- 3/4 cup sweet potato puree
- 2 tbsp packed light brown sugar
- 3 cups mini marshmallows
Steps
- Heat the oven to 350 F and line a 12-cup muffin pan.
- Whisk the flour, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg.
- Beat the butter and 2/3 cup brown sugar, then mix in the egg, vanilla, buttermilk, and sweet potato puree.
- Stir in the dry mixture and divide the batter among the cups.
- Bake for 18 to 20 minutes, until the cupcakes are firm and a toothpick comes out clean.
- Top each cupcake with the remaining brown sugar and marshmallows, then bake for 3 to 5 minutes until lightly toasted.
