Ingredients
- 4 1/2 large sweet potatoes
- 1/2 cup brown sugar
- 3 tbsp orange juice
- 2 tsp orange zest
- 1/4 tsp nutmeg
- 1/2 cup shredded coconut
- 1 cup corn flakes
- 1/8 cup sugar
- 1 tsp cinnamon
- 9 large marshmallows
Steps
- Heat the oven to 375 F and line a baking sheet with cooking oil.
- Cook the sweet potatoes in a microwave-safe dish for 10 minutes, turning halfway, until soft.
- Scoop out the sweet potatoes and mash them with the brown sugar, orange juice, orange zest, and nutmeg.
- Crush the cornflakes and mix them with the coconut, sugar, and cinnamon in a shallow bowl.
- Shape the sweet potato mixture around the marshmallows, then roll each ball in the coating.
- Bake the balls for 12 minutes, until the coating is crisp.
