2 lb medium sweet potatoes
salt
2 large eggs
3 slices bacon
1/3 cup red onion
1 tbsp white vinegar
1/4 tsp paprika
2 tbsp fresh basil
1/4 cup avocado
1 tsp garlic
1/4 tsp salt
pepper (optional)
1/2 cup fresh basil
1 tbsp olive oil

Steps

Boil the sweet potatoes in salted water for 20 minutes, until tender.
Boil the eggs for 10 minutes, then cool them in water and peel them.
Cook the bacon in a skillet over medium heat for 8 minutes, then drain and crumble it.
