Ingredients
- 1 yellow summer squash
- 1/5 tsp garlic powder or 1 clove fresh minced garlic
- salt and pepper (optional)
- 1 drizzle your favorite healthy oil for sauteing
- 1 fluffy garlic naan flatbread
- 2 1/2 oz your favorite cheese
- 1 cup fresh baby arugula
- 1 1/2 tbsp minced red onion
Steps
- Heat the oven to 425 F and place the naan on a baking sheet.
- Thinly slice the squash and sauté it with oil, garlic powder, salt, and pepper in a skillet over medium heat for 5 minutes.
- Top the naan with the squash and cheese.
- Bake for 8 minutes until the cheese melts and the naan edges crisp.
- Top with arugula and red onion, then serve warm.
