- 1 1/2 cups all-purpose flour
- 2 tsp baking powder
- 3/4 tsp kosher salt
- 1 cup sugar
- 3/4 cup sour cream
- 2 large eggs
- 1/2 cup vegetable or canola oil
- 2 tsp vanilla extract
- 1/4 tsp almond extract (optional)
- 2 lb fresh strawberries
- 1/4 cup sugar
- 2 cups heavy whipping cream
- 1/4 cup + 2 tablespoons powdered sugar
- 1 tsp vanilla
- 1/4 tsp kosher salt
Steps
- Heat the oven to 350 F and grease a 9-inch round cake pan.
- Whisk the flour, baking powder, salt, and 1 cup sugar in a bowl.
- Whisk in the sour cream, eggs, oil, vanilla, and almond extract until smooth, then spread the batter in the pan.
- Bake for 20 minutes, until the center is firm and a toothpick comes out clean, then cool the cake.
- Toss the strawberries with 1/4 cup sugar and let them stand for 10 minutes.
- Whip the cream with powdered sugar, vanilla, and salt, then split the cake and layer it with strawberries and cream.
