- 1 cup unsalted butter
- 2 cups sugar
- 2 eggs
- 2 tsp fresh lemon juice
- 1 tsp vanilla extract
- 2 1/2 cups cake flour
- 2 tbsp strawberry flavored jello gelatin powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup buttermilk
- 2/3 cups fresh strawberries
- 8 oz cream cheese
- 2/3 cups sugar
- 2/3 cups fresh strawberries
- 1 1/2 cups heavy cream
- 3 tbsp fresh lemon juice
Steps
- Heat the oven to 350 F and grease a 9-by-13-inch baking pan with cooking oil.
- Beat the butter and sugar until smooth, then add the eggs, lemon juice, and vanilla.
- Whisk the cake flour, gelatin powder, baking soda, and salt in a separate bowl.
- Mix the dry ingredients into the butter mixture in turns with the buttermilk, then fold in the strawberries.
- Spread the batter in the pan and bake for 25 to 30 minutes, until firm and the center reaches 160 F.
- Beat the cream cheese, sugar, strawberries, heavy cream, and lemon juice until smooth, then spread it over the cooled cake.
