Strawberry Puffcakes

Ingredients

  • 1 box chocolate cake mix
  • 1/2 cup fresh strawberries
  • 1 cup unsalted butter
  • 3 1/2 cups powdered sugar
  • 1 tsp vanilla extract
  • 1 pinch salt
  • 2 cups semi-sweet chocolate chips
  • 3 tbsp vegetable oil

Steps

  1. Heat the oven to 350 F and grease 24 mini muffin cups with cooking oil.
  2. Mix the chocolate cake mix with water until smooth, then fold in the chopped strawberries.
  3. Fill the muffin cups and bake for 12 to 15 minutes, until the cakes spring back when pressed.
  4. Cool the cakes for 10 minutes, then beat the butter, powdered sugar, vanilla, and salt until smooth.
  5. Spread the buttercream over the cooled cakes and chill them for 5 minutes.
  6. Melt the chocolate chips with the vegetable oil, spoon the coating over the cakes, and let it set.
