Ingredients

  • 1 lb bag chopped frozen spinach
  • 3 tbsp unsalted butter
  • 1 large yellow onion
  • 3 cloves garlic
  • 12 oz italian sandwich bread
  • 6 oz coarsely grated gruyère
  • 2 oz finely grated parmigiano-reggiano
  • 9 large eggs
  • 2 3/4 cups half-and-half
  • 2 tbsp dijon mustard
  • 1 3/4 tsp salt
  • 3/4 tsp freshly ground black pepper
  • 1/4 tsp ground nutmeg

Steps

  1. Thaw the spinach, squeeze out excess water, and heat the oven to 350 F.
  2. Melt the butter in a skillet over medium heat, then cook the onion and garlic for 5 minutes.
  3. Layer the bread, spinach, onion mixture, Gruyere, and Parmigiano-Reggiano in a greased 9-by-13-inch baking dish.
  4. Whisk the eggs, half-and-half, mustard, salt, pepper, and nutmeg in a bowl, then pour the mixture over the bread.
  5. Let the strata stand for 15 minutes so the bread absorbs the egg mixture.
  6. Bake for 45 minutes, until puffed and the center is firm and reaches 160 F.
