Ingredients
- 4 oz chopped fresh spinach
- 1 cup canned quartered artichoke hearts
- 2 cloves garlic
- 2 tbsp + 1 tsp butter
- salt
- 2 tbsp sour cream
- 1 1/3 cups shredded provolone cheese
- 1/4 cup finely shredded parmesan cheese
- 6 slices fresh hearty bread
Steps
- Cook the spinach and garlic in 1 teaspoon butter in a 10-inch skillet over medium heat for 3 minutes.
- Mix the spinach, artichokes, sour cream, provolone, parmesan, salt, and pepper in a bowl.
- Spread the filling over 3 bread slices and top with the remaining slices.
- Melt the remaining butter in a 12-inch skillet over medium heat.
- Grill the sandwiches for 4 minutes per side, until golden and the cheese is melted.
