Ingredients
- 1 recipe tomatillo red chili salsa
- 1 ripe avocado
- 1/4 white onion
- 1/4 bunch cilantro
- 6 tbsp avocado oil
- 2 packages (10 oz) hodo adobo mexican crumbles
- 12 corn tortillas
Steps
- Heat the oven to 375 F and lightly oil a 9-by-13-inch baking dish.
- Cook the crumbles with 2 tablespoons avocado oil in a large skillet over medium heat for 8 minutes.
- Warm the remaining oil in the skillet and soften each tortilla for about 10 seconds per side.
- Spread some salsa in the dish, fill each tortilla with crumbles, roll them tightly, and place them seam-side down.
- Cover the enchiladas with the remaining salsa and bake for 20 minutes.
- Top the baked enchiladas with diced avocado, sliced onion, and chopped cilantro.
